What are Witch's Fingers? And The Recipe!

My friend Corrine made these for me one year and I have been making them ever since.

They are a recipe from Martha Stewart and they taste like a pretzel or kind of like a bagel.

My kids love them and we have them every year. Usually we have them with Chili but in 90 degree weather I just have no desire to make Chili! So we had Chicken Noodle casserole and the fingers.

They are time consuming but totally worth it!

Red or green food coloring (optional, for fingers)
24 blanched almonds, halved lengthwise
2 cups warm water (110 degrees), plus 3 quarts, plus 1 tablespoon
1 tablespoon sugar
1 package active dry yeast (1/4 ounce)
Vegetable oil
5 to 6 cups all-purpose flour, plus more for work surface
1 tablespoon coarse salt
2 tablespoons baking soda
1 large egg
Sea salt

Boil some water in a small pot. Add the almonds boil for a minute or two. Immediately drain and put almonds in a bowl of water with Ice. Then you can remove the skins of the almonds super easy. They slide off. Cut the almonds in half lengthwise. Now Martha has you put food coloring in a bowl and paint each almond with a paint brush but that takes to long so I put the food coloring in the bowl and add the almonds. Let them soak for awhile. Drain them and put on a paper towel to dry. I usually make these the night before.
Pour 2 cups water into the bowl of an electric mixer fitted with the dough-hook attachment. Add sugar; stir to dissolve. Sprinkle with yeast, and let stand until yeast begins to bubble, about 5 minutes. Beat in 1 cup flour into yeast on low speed until combined. Beat in coarse salt; add 3 1/2 cups flour, and beat until combined. Continue beating until dough pulls away from bowl, 1 to 2 minutes. Add 1/2 cup flour. Beat 1 minute more. If dough is sticky, add up to 1 cup more flour. Transfer to a lightly floured surface; knead until smooth, 1 minute.
Coat a large bowl with cooking spray. Transfer dough to bowl, turning dough to coat with oil. Cover with plastic wrap; let rest in a warm spot to rise until doubled in size, about 1 hour.
Preheat oven to 450 degrees. Bring 3 quarts water to a boil in a 6-quart straight-sided saucepan over high heat; reduce to a simmer. Add baking soda. Lightly coat two baking sheets with cooking spray. Divide dough into quarters. Work with one quarter at a time, and cover remaining dough with plastic wrap. Divide first quarter into 12 pieces. On a lightly floured work surface, roll each piece back and forth with your palm forming a long finger shape, about 3 to 4 inches. Pinch dough in two places to form knuckles. Or, to make toes, roll each piece so that it is slightly shorter and fatter, about 2 inches. Pinch in 1 place to form the knuckle. When 12 fingers are formed, transfer to simmering water. Poach for 1 minute. Using a slotted spoon, transfer fingers to the prepared baking sheets. Repeat with remaining dough, blanching each set of 12 fingers before making more.
Beat egg with 1 tablespoon water. Brush pretzel fingers and toes with the egg wash. Using a sharp knife, lightly score each knuckle about three times. Sprinkle with sea salt . Position almond nails, pushing them into dough to attach. Bake until golden brown, 12 to 15 minutes. Let cool on wire rack. Fingers and toes are best eaten the same day; or store, covered, up to 2 days at room temperature.
If you try them let me know what you think!

New Crockpot Recipe

Since things have been a little chaotic lately I have been crockpotting it a bit around here. I found this recipe a while ago and made it last night. Forgot how much my kids liked this recipe so I thought I'd share it with those of you who like crockpotting too!
It is made similar to chicken and rice but has a whole different flavor.

Golden Angel Crockckpot Chicken

2 cans Golden Mushroom Soup

1 Pkg chive n onion cream cheese softened

1 pkg Italian seasoning mix (the dry stuff.. good seasons)

1 c. white cooking wine (alcohol burns off during cooking )
1/2 c melted butter

3-4 carrots~ Julienned

enough chicken for you family. I usually do 8-10 pieces like thighs

Melt butter in a saucepan.Add the rest of the ingredients except for the chicken. cook until melted. Put chicken in crock pot. Add carrots Pour sauce over top. Cook on low 6-8 hours or high 4-6 hours

Serve over Angel hair pasta, rice or noodles. I like it with noodles~ Zach says definitely with the rice.

I use chive and onion cream cheese but you can use regular too.
Very good ~ super easy. If you try it let me know how you like it!

Family Favorites

Years ago my mother made a cookbook for all of us kids. It included all of our favorite recipes from growing up.
It has become one of my favorite cookbooks. There is something comforting about making the same rolls recipe year after year for the holidays, the same stuffing recipe, Mom's fab cheesecake recipe!
I love cooking and have added to the cookbook my kids favorite recipes now as well. As each of them leave home and get married, I plan on giving one to each of them!
Ashley has been bugging me because she is at BYU and I haven't gotten hers to her yet...it's coming I promise!!
Anyhow, one of our all time favorite recipes is this homemade french bread recipe. I made it last night and thought how much I loved it. It is so good with spaghetti or a hot bowl of soup.It is so stinking easy to make and my kids absolutely love, love it!
Thanks mom for the cookbook, it is loved and well used after all these years!
So, do you have any recipes that have been handed down to you that you love??

MMM...Trashy Goodness!

OK~ most of my good friends and family already know this about my family but I am going to let you in on our little secret for those of you who don't know this....My family tends to be a bit of spam sucking trailer trash! It's true I swear. Not only do we acknowledge this but we embrace our trashy side. Ok, hell~we OWN it!

Now that you know that about us can you guess what one of my families all time favorite dinners is?

Hmm is it Tacos? Umm, No!

Is it Pizza? Nope, Definitely not trashy enough......

Is it Beans and Weenies? Ok, sleazier, but not the favorite.....

Is it Hamburger Helper??? You are on the right track, Oh yes,
a favorite meal but not THE favorite.....

Sooooo What is it?? What is the favorite meal?? Tuna burgers my friends, yes Tuna burgers..
I was making up my menu for the upcoming week and was asking the kids what meals they were in the mood for. Homemade mac n cheese? Enchiladas? Chicken potpie? Nope, They wanted Kraft Macaroni and cheese(offensive!)corn dogs, beans and weenies, and oh,oh, please, please, please mom, can't we please have tuna burgers? You never make us tuna burgers.

Ok, So I did today and you would have thought I made a 5 star meal. The oohs and ahhhs were impressive! SUPER!

See~ The spam sucking trailer trash?...We OWN it!

Ok, Now you all didn't think I was going to share with you how much we love tuna burgers and not give you the recipe...So here it is if you are feeling like embracing your trashy side too!

First, mix some tuna, mayo, and mustard together. Add some pepper, and season salt.

Now this is where you can go a little butt wild with your creative side....Add whatever your family likes in their tuna..Maybe chopped eggs, green onions, celery, relish etc...go for it!!

Second step, set your oven on broil.Take some hamburger buns, split them in half and butter the insides of them. Place them on a cookie sheet and put the cookie sheet in the oven.

Step three, once the buns are lightly browned take them out of the oven and put a scoop of tuna on the buns. Put some shredded cheese on top of the tuna. Place back under the broiler until cheese melts. Voila...Yes, a bit sleazy but~

MMMMM Trashy Goodness! Come on~ You know you're curious!
